How to make Kumquat liqueur with candied kumquats

Serves: makes about 1 litre. Prep: 30 minutes. Cook: 20 minutes, plus 2 to 3 weeks infusing.

Kumquats, washed
500g
Granulated sugar
500g
Water
500ml
Grain spirit or vodka (40% abv)
500ml
Orange zest (optional)
from 1 orange
  1. Prick each kumquat several times with a fork or cocktail stick.
  2. Place the kumquats and spirit in a large sterilised jar, seal and leave in a cool, dark place for 2 to 3 weeks, shaking occasionally.
  3. Strain the kumquats from the spirit, reserving both.
  4. Make a syrup by dissolving the sugar in the water over a low heat, then simmering for 5 minutes.
  5. Cool the syrup, then stir it into the infused spirit to taste (start with half and add more for a sweeter liqueur).
  6. Bottle the liqueur and keep the strained kumquats to serve separately as a candied spoon sweet.

Serve the liqueur chilled as a small digestif after dinner: this is the classic use of Corfu's kumquats, alongside the candied fruit as a spoon sweet.

Late Night Bars and Clubs

Greek nights start late. Bars fill from about 23:00 and clubs do not get busy until well after midnight, so an evening that begins at nine is still early.

The Liston, Corfu Old Town

Corfu Town late bars

The bars around the Liston and the back streets of the Old Town stay open late, and are far more local in feel than the resorts.
